The Anji region, part of the province of Zhejiang, can look back on a century long history and experience in cultivating tea. Various white teas, called Bai Cha, are produced in the home region of the green bamboo. Actually, they should be called classical green teas. However, their spring sprouts shimmer silvery white rather than green due to their low chlorophyll and polyphenol content. At an altitude of approximately 800 m, each year just under 5,000 kg are harvested and processed by hand. Experts speak of liquid silk due to the exceedingly creamy and soft texture of the tea.
