Delicate and much sought-after honey. Runny, very pale straw-yellow in color. When pure, it is almost crystal-clear, with delicate flavors of sugared almond and vanilla. Does not crystallize easily, due to its high concentration of fructose.Produced in May.
Excellent for candying fruits and vegetables. It's superb with fresh fruit salads or as glaze for tarts and fruit pies. Added to tomato sauce, balances its acidity and enriches flavor.
