Pale in color honey varying from straw yellow to pearly white or light beige if crystallized, its fragrance is clearly reminiscent of orange blossom. With time, the flavor takes on additional delicately fruity and slightly citric tones. It crystallizes spontaneously a few months after the harvest into granules of various sizes.
Its floral notes give this product a strong vocation to pastry and wheat pasta. It's great in conjunction with flower omelets or spring vegetables.
