Produced between the end of June and the first half of July from mountain sweet-chestnut flowers, this honey is extraordinarily versatile and is the richest in mineral salts. Amber colored, sometimes dark amber with reddish hues. It has an aromatic, herbal and distinctive aroma and flavor with a slightly spicy aftertaste. Crystallizes slowly but not always fully.
This honey is an perfect ingredient for the filling of pumpkin ravioli. Slightly warmed, by contrast, excels an a persimmon mousse or smoked food. Magnificent if mixed with a fresh whipped ricotta.
