Produced in July, this honey has a strong personality. Amber or light hazelnut-brown in color, its aroma is fragrant and pungent with liquorish, sometimes slightly smoky notes. On the tongue it’s medium-sweet, very intense with definitive balsamic notes. Crystallizes spontaneously and quite quickly into fine grains.
Its features make it ideal for any dish where fresh herbs are included. Its savory notes suggest the use on raw sea fish. Combines well with cheese, mainly goat and sweet Gorgonzola; as well as with different types of milk.
