Manufactured at the end of June, from the flower of the wild carrot.Well crystallized honey shows intense golden yellow hues of amber. The scent is fresh, sweet, which refers to its flower. The taste of fresh spices with citrus and caramel undertones surprises with a long lasting finish of fresh walnuts and gently tart, licorice-like finish.
United with sweet spices and a little freshly ground black pepper it makes an excellent glaze for a duck or chicken breast. Wild carrot honey may be used in sweet bread dough with raisins and pine nuts or to dress steamed sweet potato.
