Produced at the end of June from the marvelous linden tree,
a plant still shrouded in an atmosphere of ancient rituals and
ceremonies. A pale crystallized honey, it may present highlights of
golden yellow and amber. Noted for its fresh, almost minty scent,
which is reminiscent of the linden flower, with an intense flavor
of fresh spices. Its taste is medium-sweet and very long-lasting, with fresh
walnut tones and a delicately tangy aftertaste. Crystallizes into
large and irregular-shaped grains..
Combines well with all food cooked with sage, basil and lemon grass. Can be added to boiling water for noodles made of wheat or barley.
