Produced between July and August, when the bees collect the
sugary honeydew secretion from fir tree, which offers rare and complex
qualities. Dark amber in color, sometimes with greenish hues, this honey
usually presents a fragrance of balsam, very persistent to
the palate. It's not very sweet, has distinctive tones of malt, barley and
caramel with smoky nuances. Crystallizes very slowly.
Can be served on cold cuts with sourdough bread. Dissolved in lemon juice is great for dressing a fruit salad. Its notes of barley recommend using this product for lacquered duck breast.
