Rooibos, or “red bush”, is a broom-like member of the legume family of plants found in South Africa’s fynbos.
Rooibos is usually grown in Cederberg, a small mountainous area in the region of the Western Cape province of South Africa. The leaves are oxidized, or fermented, to produce the distinctive reddish-brown color of rooibos and enhance the malty and slightly grassy flavor.
Rooibos is becoming more popular in Western countries due to its lack of caffeine and low tannin levels compared to black or green tea.
Commonly prepared in the same manner as black tea, with milk and sugar added to taste, Rooibos can also be prepared with a slice of lemon and honey instead of sugar for an amazing drink.
